Food - The world-renowned cuisine of Chef/Proprietor J.
Joho has earned top honors. Everest is a member of Relais & Chateaux/Relais
Gourmand and Traditions et Qualite, and has received the Five-Diamond Award
from AAA, the Mobil Dining Award, and top ratings from the Zagat Survey and
Maitre Cuisiniers de France. The menu was prepared to perfectly compliment
the wine selections - Maine Lobster Consomme, Madras Curry Sabayon, (Domaine
de Chevalier Blanc 1986), Filet of Wild Line Caught Halibut w/ Hazelnut
Emulsion (w/ mashed potatoes to die for!), (Darioush Signature Chardonnay
2002) , Carnaroli Risotto au Chevalier Rouge (Domaine de Chevalier rouge
2000), Sauteed Beef Tenderloin and Braised Oxtail au Cabernet, (Darioush
Signature Cabernet Sauvignon 2001), Assortment of Midwest Cheese (Domaine de
Chevalier Rouge 1990), and Crispy Rhubarb and Strawberry Strudel, Fromage
Blanc Glace, (Shapar 2000).

Wine - Everest's award winning wine list features the
largest selection of Alsace wines outside of Alsace. Alpana Singh, the
youngest Master Sommelier in the U.S. is available to compliment the cuisine
with Everest wine selections.
The wine selections this evening featured Darioush Voigner 2002, Darioush Signature Chardonnay 2002, Darioush
Signature Cabernet Sauvignon 2001, Shapar Late Harvest Riesling 2001 along
with Domaine de Chevalier Rouge 2000 & 1990, and Domaine de Chevalier Blanc
